Jake Connell
Before hospitality, Jake worked as a practice manager at a law firm in his birthplace, Birmingham, England. While travelling through Australia, he swapped the desk for the bar. Over the years, he combined his management background with hands-on experience in speakeasy-style cocktail bars in Auckland, Bristol, and Berlin — resulting in an experienced bar manager with a deep understanding of people, team dynamics, gastronomy, and leadership.
Xochilt Mejia
Born in Sweden to Salvadoran parents, Xochilt’s background in art has always shaped the way she sees hospitality. She began her career at eighteen, starting as a runner and waitress before moving into bartending. Her inherent artistry, determination, and industriousness soon took her into management, where she developed a deeper knowledge of mixology, bar operations, and structure — approaching her work with a combination of creativity and operational insight.
